Biscuits. They're a classic southern staple that everyone in the South knows how to make. I like to think I'm from the South as I love Southern food. It might be my favorite type of food at the moment. I've always wanted to make biscuits but thought they were hard and messy. Yes, they are messy but once I made them for the first time, they were quite easy and didn't take that long. I made several batches to see which one turned out to my liking. The first batch, I used all buttermilk as I think most biscuits are made with buttermilk. I thought it was too tangy. The next batch, I used mostly buttermilk and a little bit of milk. I still thought it was too tangy. I tried all milk and that's the one I really enjoyed. Next time, I will try mostly milk with a little buttermilk. These biscuits are amazing hot and perfect any time of the day. Recipe makes 6 biscuits with about a 2.75 inch biscuit cutter:
- 2 cups flour - 1 T sugar - 8 T butter *frozen - 1/2 t salt (or to taste) - 3/4 cup milk - 1 T or 2 t baking powder *depending on how high you like your biscuits 1. Mix dry ingredients 2. Grate in frozen butter and lightly mix 3. Make a well in the center and pour in milk 4. Combine but don't overmix 5. Turn out to lightly floured surface and knead a few times to form a ball 6. Flatten dough to 1 inch thickness and fold and turn 7. Repeat process 5-6 times to get lots of layers 8. Flatten dough to 1 inch thickness and cut with biscuit cutter 9. Fold and repeat until you achieve 6 biscuits 10. Place close to each other on parchment lined baking sheet 11. Can brush with butter or honey on top 12. Bake for 15 min at 425. Cool for five minutes before enjoying
