I'm not a good blogger. You could have guessed this by now by my lack of posts and the quality of my posts. I'm not like those fancy food bloggers but I would like to be. Truth is, I don't have the $$ to spend on whatever goes behind good photographs - camera, props, food, etc. I'm not working and if I had a job, I might have a little more to spend but this is purely out of my pocket. Therefore, I can't spend as much on food, hence today's modified recipe. I got a request on my Instagram to make chicken fettuccine alfredo. I would have loved to make this but I'm poor. I wanted to buy fettuccine pasta as it goes well with cream sauce but my mother bought an extra spaghetti box so I decided to use this. I had all the ingredients at home besides the cheese and heavy cream. I also wanted to buy the chicken to make the recipe legit but no one is giving me a job (I need a job). Alfredo sauce, to me, seemed really hard. The first time I made it, I think I burned the sauce and I never made it again. It was only until this year that I decided to give it another go and it turned out successfully. It comes together so quickly and since I'm making it at home, I know what goes in it and it's (a little) healthier. There's endless options with cream sauce. You can put chicken or you can put salmon and vegetables. There's also a cream-based pesto sauce that goes well with short pasta. Cream sauce can also be a replacement to red sauce on pizza. Cream sauce isn't the healthiest but you don't make this often so it's good to treat yourself once in a while. Pasta was the first dish that I learned to make. When I was in high school, I would make pasta all the time. My obsession with pasta has died down since then but I won't turn down a good bowl of pasta, especially if the noodles are handmade. The best handmade pasta has to be Bestia in Downtown LA. It's perfectly al dente and you can't get that when you cook al dente pasta at home. Pasta is a very economical dish that you can stretch throughout the week. I think that's why my mother always fed me pasta. The noodles can be 1 dollar when it's on sale and she would use the jarred sauce from Prego. She loves Prego but for myself, I'd rather make the sauce homemade. It's fun and much healthier. If you want a really good jarred sauce, I would have to go with Rao's. It's all single ingredients and very high quality. Ingredients (to make sauce for 1/2 box of pasta):
- 1/2 c heavy cream - 3 T butter - 1 T oil - 1/4 cup shredded parm cheese - Salt and pepper to taste Directions: 1. Boil pasta 2. Heat heavy skillet over medium heat 3. When pan is hot, melt butter and oil 4. Pour heavy cream and stir until thickened 5. Turn heat off and add cheese. May add more cheese to achieve desired texture (thicker) 6. Season to taste 7. Add pasta with little pasta water. Stir and enjoy
